While the Portuguese cuisine is diverse, there is one indisputable king ingredient throughout the country: bacalhau, or salted dried cod. Because of Portugalβs ancient ties to the sea, you find bacalhau lovingly served in a wide variety of dishes. The cuisine is dominated by meat, fish, olive oil, garlic, and onions. You also will find a range of spices like piri piri and saffron due to Portugalβs colonial participation in the East Indies, Africa, and the Americas.
