While the Portuguese cuisine is diverse, there is one indisputable king ingredient throughout the country: bacalhau, or salted dried cod. Because of Portugal’s ancient ties to the sea, you find bacalhau lovingly served in a wide variety of dishes. The cuisine is dominated by meat, fish, olive oil, garlic, and onions.
