Chiapas, like Oaxaca, has held onto its indigenous heritage in its cuisine. There are 18 recognized indigenous groups in Chiapas, many of Mayan descent. All have specific regional specialities and unique foods. Unlike other parts of Mexico, chili peppers and spice isn’t used as heavily - a subtle sweetness is preferred. Herbs like chipilΓ­n and hoja santa are used widely and wild-foraged plants are still incredibly important.
