The cuisine of Bashkortostan is mainly dominated by the Bashkir people, a Kipchak Turkic group of people. They are seminomadic cattle herders, so there’s an emphasis on horsemeat and fermented milk products. Horse fat in particular is considered a prized ingredient. Expect minimal spices (only black and red pepper) and honey.
