New England cuisine is rooted in English and Native American cuisines with European influences (mainly Irish, French, Italian, and Portuguese). Because of the geographic location, ingredients like seafood, potatoes, beans, maple syrup, cranberries, blueberries, and dairy stand center, usually baked due to early Puritan influence. You may notice there are limited spices (and sometimes none) used in New Englander cuisine. This is due to a string of health reformers based in the Northeast who advocated eating bland food in the 19th century, leading to a permanent impact on the cuisine.
