Ethiopian cuisine is a plethora of stewed eaten with the iconic injera (a sourdough flatbread made of teff flour). The influences range from the variety of ethnic groups in the country, religious restrictions, and Italian occupation. Two core ingredients are necessary to get the flavors right: berbere (a spice blend) and niter kibbeh (a spiced clarified butter).
