Karelia is a region that spans across Finland and Russia and has historically be fought over between Sweden, Finland, and Russia. However, regardless of boarder, Karelian cuisine has remained as a unifying force across the ever-changing borders. Given where the region is located, you can expect to find lots of fish and mushrooms, both of which are readily available in the numerous rivers and lakes and the ancient forests. Dishes are usually slowly cooked in an oven, a technique that was meant to both cook the food and warm a house simultaneously.
