Veneto is broken up into three main geographical regions: the coast, the plains, and the mountains. The cuisine of these three regions are distinct and different throughout the region. Polenta is the standard carb of choice, regardless of region. But you can find seafood-heavy dishes in the coast, grilled meat and pasta in the plains, and game meat and cheese in the mountains. Additionally, in the mountainous regions, you can expect to see some Austrian- or Tyrolese-inspired dishes. Unlike other regions of Italy, while olive oil is very important and popular, donโ€™t be surprised to see more butter involved in the dishes.
