Yucatรกn is Mexicoโs connection to its rich Mayan past. The people who lived here managed to hold off the colonial efforts of the Spanish longer than many other regions. This has led a more flexible blend of Mayan with Caribbean, Dutch, Lebanese, and Spanish cuisines. There are four main pillars in Mayan cuisine that are still consistent in Yucateco cuisine: achiote, citrus, habaneros, and smoke. Expect wonderful barbecued dishes punctuated by sharp, almost vinegar-y citrus.
