Yucatรกn is Mexicoโ€™s connection to its rich Mayan past. The people who lived here managed to hold off the colonial efforts of the Spanish longer than many other regions. This has led a more flexible blend of Mayan with Caribbean, Dutch, Lebanese, and Spanish cuisines. There are four main pillars in Mayan cuisine that are still consistent in Yucateco cuisine: achiote, citrus, habaneros, and smoke. Expect wonderful barbecued dishes punctuated by sharp, almost vinegar-y citrus.
