Jilin is one of China’s furthest north provinces, sharing a border with North Korea. This cuisine is Han in root, but with a lot of influence from neighboring countries and ethnicities, including Manchu, Korean, and Mongolian. Because of the extreme winters, preservation methods are incredibly important. Additionally, because rice can’t grow in the region, wheat, buckwheat, and sorghum are more prevalent grains in the diet.
