Also called Gan cuisine, the Jiangxi cuisine is of distinct Han origin with ancient Miao influences and more modern Chinese ethnic group influences due to more recent immigration. Within the province, there’s technically four distinct genre, but in general you can expect overt spiciness, spectacular banquets of freshwater fish, fermented black beans, and tea oil.
