An island national in the South Pacific, the traditional diet of Tonga consists primarily of locally sourced ingredients like coconut, taro, and fish. While pigs and chickens were also traditionally eat, these proteins were usually (and still are) saved for special occasions while shellfish is usually eaten raw. The diet of Tonga has certainly been influence by Western colonial foods, but the biggest impact to modern Tongan cuisine is the fact that the modern lifestyle has changed the meal structure of its citizens. Prior to the westernization of Oceania, Tongans cooked one large midday meal in an earth oven.
