Because Abruzzo is criss-crossed and divided by mountains, the food that has developed here is not only distinct from much of Italy, but distinct within the region. You can find recipes from the valleys that tend towards grain-heavy options, from the mountains with lots of cheese and lamb, and from the coast where you find an abundance of seafood. Isolation has kept the cuisine relatively unchanged for hundreds of years.
