Greek cuisine can proudly trace much their roots back to ancient Greece with some roots tracing back to the Hellenistic, Roman, and Byzantium periods. Additionally, being situated essentially between Italy, the Balkans, and Turkey, there’s dishes that have distinct influence from these regions as well. In short though, there are three pillars of Greek food: wheat, olive oil, and wine. Many vegetables grow quite readily in Greece, so there’s vast diversity in the cuisine.
