The cuisine of Madhya Pradesh is a relic of the different kingdoms and regimes to rule the Indian subcontinent. Thereโ€™s ties still to the Mughal era, the Holkar family, and the Jahanuma family. Within the region, thereโ€™s still an immense amount of diversity, with the north and west variations of the cuisine dominated by wheat and meat versus the south and east by rice and fish.
