Puebla boasts some of the richest cuisine in Mexico. Thereβs still deep roots in the ancient Mesoamerican recipes of the Mexican corn belt, but with heavy Spanish, Arab, and Sephardic Jewish influence. Because of Pueblaβs location, it has historically been a major stop on the trade route between Ciudad de MΓ©xico and Veracruz. This in conjunction with the famous Poblano convents that wealthy merchantsβ daughters favored lead to a true melting pot of foreign and local flavors.
