That doesnโ€™t take away from itโ€™s large agricultural impact on Italy and the distinctly herbaceous cuisine. Fennel is an incredibly popular seasoning. Youโ€™ll find spicy cured meats like capocollo and salsiccie al finocchio, cheeses like maciuocco and caciocavallo, and lamb or goat.
