Molise is a region where the mountains spill into the sea. It is small and have a relatively lower population. That doesnโt take away from itโs large agricultural impact on Italy and the distinctly herbaceous cuisine. Fennel is an incredibly popular seasoning. Youโll find spicy cured meats like capocollo and salsiccie al finocchio, cheeses like maciuocco and caciocavallo, and lamb or goat.
