Xinjiang is the western most region of of China, historically and presently situated on the crossroads of Central and East Asia. This means that the cuisine is a marriage of the Turkic Central Asian cuisines and China’s heavily Han cuisine. Because Muslim ethnic groups like the Uyghurs, Pamiris, and Hui, there’s an emphasis on halal foods and lamb. You can expect the nomadic foods of Central Asia like laghman mixed with East Asian classics like bao.

Please look into the human rights issues currently plaguing the Uyghurs and other ethnic minorities in Xinjiang. Boycott companies with known work camps in the region!
