This island in the Caribbean Sea is a contentious territory of the United States that has fought proudly to continue protecting its distinct culture and heritage in the face of modern colonialism. The food of Boricua is a fusion of TaΓno (the indigenous group that gives the island the name βBoricuaβ), Spanish, and African (specifically Canarian) cuisines. The foods are simultaneously distinctly Caribbean and distinctly Latin American, with incredible diversity of food given the wide diversity of the geology of Puerto Rico.
