This island in the Caribbean Sea is a contentious territory of the United States that has fought proudly to continue protecting its distinct culture and heritage in the face of modern colonialism. The food of Boricua is a fusion of TaΓ­no (the indigenous group that gives the island the name β€œBoricua”), Spanish, and African (specifically Canarian) cuisines. The foods are simultaneously distinctly Caribbean and distinctly Latin American, with incredible diversity of food given the wide diversity of the geology of Puerto Rico.
