Chifa cuisine is a fusion between Cantonese and Peruvian cuisines, often leveraging traditional Peruvian ingredients with Cantonese preparations. This cuisine likely started in the late 1800s to early 1900s when Chinese immigrants moved to Peru, mainly from Guangdong. As is the story with most fusion cuisines, these immigrants were removed from many of their traditional food sources and they had to adapt their cuisine to use what was present. In 1920, when the first Chifa restaurant opened, this cuisine really gained immense popularity - particularly in Lima.
