Guanajuato is a landlocked central Mexican state that sits on the Trans-Mexican Volcanic Belt. This means it’s a transition state from the arid north to the lush south. As such, the cuisine is known as a blend between northern and southern Mexican traditions. But more notably, this state is known for sweets, dairy products, and bread. The best know of these products is cajeta - similar to dulce de leche but made with goat’s milk and occasionally flavored with vanilla, coconut, or strawberries.
