The political tense between Taiwan and China make for an equally tense history around the cuisine of Taiwan, especially considering that colonial behaviors from China, Japan, the Netherlands, Spain, Portugal, and the United States have already historically intertwined with the indigenous Formosan cuisine. However, the bulk of modern Taiwanese cuisine is a mix of almost every Chinese provinceβs regional cuisine, using the ingredients available on the island, including sub-tropical fruits and sweet potatoes. As such, youβre likely to see versions of dishes you might recognize from major cities like Chengdu, Shanghai, and Beijing. Between the commercial sugar industry and the willingness to the cuisine adapt to the palates of former-Chinese nationals from every corner of the country, Taiwanese dishes are notably sweet. That said, their desserts are markedly less sweet than Western-style desserts.
