This West Indies island has a rich (and frequently difficult, sad, and unjust) history - and its cuisine reflects that. Pre-colonial flavors still exist through the influence of the multiple indigenous groups of Barbados. Portuguese, British, and Irish dishes and flavors are prevalent due to colonization. African impact was brought due to slavery on the island to harvest tobacco and, later, sugarcane. And Indian cuisine became highly influence later due to a work-related migration. This has led to a diverse cuisine that has proudly taken the best of all of these influences and combined them in a myriad of ways with the native tropical fruits and seafood.
