Like many island in the Caribbean, Bahamian cuisine is shaped by it’s indigenous, colonial, and slaving history. The food weaves a tale of eventual emancipation. It uses local ingredients like shellfish, tropical fish, and hot peppers, all ingredients that the indigenous TaΓ­nos would have used. Rum is exceedingly popular both as a dish and as an ingredient due to its British colonial past. And there is distinct similarities to the foods of the American South due to the fact that slaves from West Africa were forced to cook for their British enslavers - resulting in a similar effect of British-coded foods being cooked with West African techniques and local ingredients.
